A quite lovely roaster although I scratched mine to death the first time I used it by whisking up the gravy I was making in it after roasting with a wire whisk instead of a silicone one, but I suppose a roaster is for roasting, not for being pretty. A bit harder to clean up than a nonstick would be, although the stainless (without the nonstick rack) is safe to use at much higher temps than a full nonstick roaster, so I got this instead. (just don't use the nonstick rack above its rated temp.) I think I got mine at $99 which was a lot cheaper than other stainless ones. I like that the handles don't extend much wider than the roaster, which means it fits into places the ones with huge handles won't. Also it has a nice bottom that isn't too fiddly compared to some others that have a fancy raised area to spread juices away from the middle. This one has a single central raised area that can be placed on an electric burner to make gravy and not give you troubles with wobbling from trying to get it to sit properly cause of those raised bottom parts on some other roasters. All in all, I'm happy with it, although I might use it more often if it were easier to clean. For what it is, though, it's quite nice.

Excellent quality, easy to clean, cooks evenly. I like the rack, too. Juices, etc. scrape out easily.Other reviewers don't like the "loose" rack...I do!! You can more easily slip carrots, potatoes, etc. under your roast and it is more convenient when you use a baster to suck out juice to baste. The only thing I hadn't realized is that the bottom is not completely flat...I originally bought it so I had a pan big enough to cook my crème brulees in...this is not a big problem, it still works fine for that, just a little more awkward. The rack cleans very, very easily (at least so far).But if you were looking for a completely flat bottom, this might bother you. It does, of course, work better for roasting purposes.Other reviewers don't like the handles...I like them fine. It gives me a little extra room in the over if I want to add a small dish next to the roasting pan (very small, but helpful for me).One point, I found it awkward to try to use it to make gravy in the pan, but maybe that is just me. I was happy that the juices & drippings didn't get "lost" by having to have it in a disposable aluminum pan, they were very easy to recover.Disclosure: I have not cooked a full-sized turkey, but have cooked a whole pork loin & a lamb sirloin roast.

America's Test Kitchen rated this the best roasting pan available. It is large enough to roast most anything and it is dishwasher safe which is awesome for cleanup. High quality, great handles make it easy to grab even with oven mitts on, and it is deep to trap all the dripping from anything you cook or to fill with veggies. Love it!

UPDATE: I have roasted a lot of birds and veggies in this pan after a couple months, and I have no complaints about the pan itself. However as others have reported, the non-stick coating on the rack has started to flake off. There are a half dozen spots about the size of a dime where it is now bare rusty metal. Will be contacting Calphalon about this.The pan cleans up well in the dishwasher every time! The quality is obviously high and it just looks great. So nice to have a big sturdy pan to roast meat and veggies in. Some complain about the handles being turned inward, which is occasionally clunky, but it makes it much easier to store and fit into the refrigerator. It did arrive with some machine grease(?) type residue in a corner, but that was easily removed with rubbing alcohol, and it was an Amazon Warehouse deal so maybe that's why it ended up there in the first place.

Beautiful, love the more upright-standing handles because I have a small wall oven. This saved my life when oven-browning 4 racks of ribs for a crowd, all I had to do was cut the rib sets in half and STAND THEM UP IN THE RACK!!!!! Crazy, right? They browned nicely in a slow oven, and were ready for saucing and another stretch in the oven til the meat was so incredibly tender. Gonna make a moussaka in it next. Someday maybe I'll use it for a real roast or a turkey. Clean-up was a dream, even when I had to leave the pan and rack for the rest of the day before getting home to clean it all up. It's so nice, it's an honor to hand wash it.

I bought and returned three other roasting pans before I got this one. One issue is that I didn't want a "non-stick" surface, which degrades at 400 degrees, which really isn't that hot. I tried the KitchenAid 16.5" roaster but found it too tinny and light weight for my taste. The Cuisinart was too big for my 18" x 18" oven.I ordered the Calphalon with some trepidation; it's a solid tri-ply, but would it fit in my oven? I couldn't find the dimensions (including handle) on other websites (even on Calpholon.com) and Amazon lists the max dimension at 18.6 inches, which wouldn't fit. Thankfully it turns out that the BOX is 18.6 inches, the actual pan with handles is something less than 17.5 inches - it fits!I note others have complained about the nonstick rack quickly deteriorating - I think my solution will be to use a different rack or no rack on those occasions when, as in searing a standing rib roast, I crank the heat way up.I'd like to have a Mauviel 5 ply copper roaster; I'd also like to have a red Testarossa, but it ain't gonna happen. This Cephalon roaster fits all my criteria and whilst not cheap seems to be a good value for the soid quality - I'm happy.

Better than most roasting pans on the market

Pan is nice and sturdy with good handles where I don't have to fear being burned, like my old pan. I have two concerns: 1. I had seen the product reviewed on America's Test Kitchen, but the roasting rack moves around more than I expected vs. what ATK's review indicated. That said, so far I haven't had any problems. 2. The pan didn't come as clean as I thought it would in the dishwasher after the first use. The bright, shiny surface isn't so shiny anymore but I don't want to scrub the residue with steel wool for fear it would permanently scratch the pan.

Pan is very nice, however the rack coating started to flake off after only one use at Thanksgiving. I would rather have a non coated SS rack and scrub it after every use then to wonder how much Teflon (or whatever that coating is), is remaining on my food or in the drippings that would be used for gravy.

We searched for a long time to find a roasting pan that would fit in our narrow oven. The design of this pan, with the handles curving inward rather than sticking out, makes it fit just perfectly though I need to be careful not to burn my hands on the walls of the oven. The pan walls are a nice thickness and I could not detect any flexure in the pan while handling it; I found that a similarly priced Martha Stewart pan from Macys was so thin that it would flex and bow! I docked one star because the quality of the rack seemed questionable - a bit flimsy and the coating looked thin in a few spots. Time will tell how it holds up.

Heavy duty roaster. Only thing that bothers me is the inner rack. It slides around so much and almost seems like it was not made for this particular pan. For a nice Calphalon product like this, it really makes me wonder what they were thinking making it that way.....
Nice Pan, Little Issues

Nice pan, but I don't understand the raised center portion. For those of you viewing the pictures you can sort of see it. In the center of the pan there is a raised square about an inch from each side. It still gets hot on my induction burners but it's sort of inconvenient. Other than that I'm pretty happy. Only small issue is that the rack that came with it doesn't sit quite flat, rocks a little bit, but I haven't used it yet. I don't think it would impact any dish beyond being a little annoying. I Made my Christmas bird in this pan this year and it came out great. I had no problems with warping. If I try to make a gravy out of pan drippings I'll follow up with an update that deals with the raised section.

I think this is a really well made roaster and I'm happy with it.I love the size and quality of materials and layout and design of the perpendicular handles system as you can see in photo.I cooked a 20 pound turkey in it and it fit fine. Also cooked two 6 pound birds, side by side. No problem.If I were to redesign it, I would fit the V Rack differently.As it currently designed, the V Rack slides around in the pan and becomes unstable with a large bird, especially if you must tilt it at all getting it into or out of the oven - or if the bird is simply too large to hold steady.You may notice this when you first put the bird into the V Rack and the rack into the pan - you will certainly notice the instability when the pan is oily from drippings and the V Rack slides like a hockey puck and you've got a 20 pound bird on the move.Beware not to bump or snag the bird on anything or it may tip out - it can be dangerous.

Great Pan; Rack, Not So Much!

Pan itself is as advertised and of good quality, rugged and well engineered. The rack, advertised as non-stick is of inferior quality. For a near $100 expenditure you'd expect the non-stick coating to last for more than one use. We purchased for traditional Christmas dinner of prime rib roast; used it once and the non-stick coating is peeling off in five different locations and has most likely been ingested; this is not what you'd expect from something with the name Calphalon. Purchased as a "must have item" recommended by America's Test Kitchen, we were terribly disappointed and would advise Calphalon to consider switching to a heavy gauge stainless steel rack, which, while not non-stick, would a least not peel off with your meal and become part of it; if not, then others should consider their options carefully!

Both pieces look good in quality. I got this for Thanksgiving turkey to start with, and it preformed well. I definitely have to agree with other reviews about the rack not fitting the pan correctly. One direction is fairly snug, but the other direction it will slide a lot if you don't lift it up relatively level. And with a large piece of meat on top, that does concern me for safety or just worrying about dinner ending up on the floor. That's why I give 3 stars. It was close to Thanksgiving, and my first 3 choices had long handles making them to big for my oven so.............

Bought this because of the recommendation on Cook's Country. When I ordered it, it was $30 cheaper than previously advertised. When it arrived, the box was labeled "Special Value." Probably because the handles tilt in more than the recommended version and the rack is a flimsy piece of junk that doesn't fit the pan. 3-4 inches of sliding when I'm pulling a 20-pound turkey out of the oven is an accident waiting to happen. I'm taking the $30 that I "saved" and buying a decent rack.

Used it for the first time last week (11/28/13) and only had temperature to 350 and it warped a bit. Not sure if that is normal. Seemed to go back a bit after cooling. But first stainless roaster I've owned.

Well made but very expensive roasting pan.We had another one, much less expensive, that had a rack that locked into place in the pan that I much preferred.My wife didn't like that the non stick coating on that pan was flaking so she purchased this one that allows the rack to slide around the pan when you pull it out of the oven.

I really wish that I had purchased a different roaster. The handles curve inwards towards the roast, which makes the use of pot holders unnecessarily difficult. The rack is far too small for the pan, and does not come close to fitting, so it slides all over the place. Design before function.It is extremely well-made, and should last a lifetime. But I have a feeling that I will get tired of those flaws and will give this away and buy another.

The non-stick coating on the rack flakes off very easily and quickly with only a few uses. I followed the manufacturer's instructions for cleaning and never used either scrubbers or abrasive cleaners on the rack, but the coating still disappeared. When I contacted Calphalon about purchasing a new reck, I was told that they do not make them available as open stock. I am now stuck with a very good roasting pan without a rack that I can expect to not contaminate my food with the non-stick coating. My upset with Calphalon (since they have been aware of this problem for some time) is strong enough that I will never again purchase a Calphalon product.

We bought this last year and just had the opportunity to use it to roast our turkey. Two major issues with this one. The rack moves a lot back and forth across the pan. I was looking for a pan with a snug rack. The other issue is we scrubbed the pan multiple times and it still seems greasy. I'm very disappointed.

I thought this would be an ideal roaster for my new oven. It may be for someone else but for me; it was almost too heavy to lift. (and it was not filled with food). I may be an "older" woman but I lift weights at the gym! This pan is for a strong male chef.
