I bought two of these, (one for me and one for Mom) back in 1993 at a local event and have cherished it since day one. I will admit I was a bit hesitant to order a new one, most items are not made as well as the 'old days' but I couldn't have been more incorrect.This new V slicer is just perfect and so sharp, I didn't realize I had really worn my old one down so much! The bowl and lid attachments are really helpful and the ergonomic changes to the board itself are sheer genius for us longtime users.If you are an old-time user, do yourself a favor and update now, you will not regret it. This product just keeps getting better and better. Thank you Swiss Borner, I will continue singing your praises!

I cook a lot, and nearly everything is from scratch, so I want things to work when I buy them and not add too much mess to my already huge collection of kitchen tools. In about 30 seconds I knew there was a reason the V-Prep was so highly rated. The storage design alone would make me interested. (I like things that pack themselves away in convenient little boxes.) What made me really happy though is how well this worked. The blades are sharp and it is super easy to switch slice types. You can really fly through veg on this thing, so my fingers appreciated the large safety holder. I spent a mere 3 minutes from start to clean up turning a few potatoes into shoestrings. The kid is happy. I am happy. The V-Prep was dry and neatly away by the time I was done serving lunch. (This is how I wish the rest of my kitchen time went, but alas, we can't have everything.) I have tried in on a few other items on it and everything went pretty much the same. Quick cuts, quick cleanup. I'm definitely satisfied with my purchase.

Great tool. Easy to clean and blades are sharp. Makes my meal prep fun. I am a subscriber to shipped box meals like Blue Apron and SunBasket. Great food but requires lots of vegetable cutting and dicing. This tool makes short work of my task. It also makes the food more attractive and food cooks more evenly.Negative....White kinda stains on foods like beets, but not horrifically. Also, would like to be able to hang it. I don't see how I can and access the tools, although the directions say it can be hung. I don't believe it really was designed to be hung, more like the knife block...just sits on the counter.

I would rate this five stars if for no other reason than this: It makes perfect shoestring potatoes! You know - those sinfully delicious crispy, crunchy potato strings no thicker than a wooden match and usually sold in a can. I had some potatoes that were starting to sprout and get a little soft, so I thought I'd experiment. Snap off the sprouts, wash the potatoes and wipe dry - don't peel them. Run the potatoes through the Borner fitted with the fine julienne blade. Wash the cut potatoes in a bowl with cold water to remove the excess starch. Drain and repeat 2-3 times until the water stays clear. Drain and dry the shoestrings on paper towels. Drop by handfuls into a 325 degree deep fryer. Cook 5-8 minutes, or until almost all bubbles have stopped coming off the shoestrings and they are golden brown. transfer to a shallow pan or plate lined with paper towels and allow to cool. Season to taste. I prefer a little seasoning salt. My wife likes them best unsalted. Yum! Oh, yeah. The slicer works great for other things too. :P
Extremely sharp blades

I just purchased this product about a week ago and used it several times already. I made vegetable lasagna using six different vegetables and cutting them all with the thick julienne blade. I made scalloped potatoes using the thin slicer blade. I sliced onions for onion soup and several large mushrooms with the thin julienne blade as well as the thick slicer blade for mushroom soup. Everything I sliced came out perfect. You have to remember two things these blades are extremely sharp-which is what they're supposed to be otherwise they wouldn't cut properly-and you have to use a light touch let the blade do the work. I practiced on a large potato when I first got the unit so I knew what I was doing and knew what not to do. (Saved the potatoes and made a great potato soup).There are two things to remember: the blades are extremely sharp - I can't stress that enough. The second thing is to remember to use a light touch, don't press down, let the blades do the work. Seems to work well slicing tomatoes that are firm and not overly ripe. I recommend using the thicker slicer I think that's the wavy side, or the tomato will just mush up.The unit cleans very easily as do the plates by just running them under hot water and letting them air dry. Haven't tried dicing yet but will follow the advice of one reviewer and rotate the vegetable 90° with each slice. The only downside is I'm having a problem getting the blades back into the holder. Can't figure out what I'm doing wrong. But all in all a pretty good gadget for the money.Just a heads up to those who have access to YouTube, put the name of the item and the model number in the search box and you can see a video showing how to use this.

I bought my first Borner at a kiosk in a mall in 1991. It was really expensive. It was $20. It came with a crisscross fry cutter if I bought TWO. ( I am smiling) So I did. I gave my mom one. I used that slicer pretty much every day until 2000. I decided to treat myself to a new blade and KEPT the old one for camping at Burning Man.I have the second one right now, fourteen years later.I was a cook at home girl with a lot of veggies, but over the last few years I ramped that up. I have cooked three full meals for four plus people every day for more than four years.The V bottom is dull so I use the guide and cut carrots on the higher part of the V (towards the sides).When I say carrots, I mean a pound at a time for dinner. This is the BEST and fastest veggy slicer I have ever used.You could make sushi veggies on it! I LOVE this item. The only issue is that it never gets put away.Salads, omelets, nachos, soup...

Bought this based on America's Test Kitchen reviews. The blades are and always stay extremely sharp. The storage device is nice and keeps things together and compact. I found that I prefer a slicer with a stand versus something that goes over a bowl. I have to make sure nothing slides around when using it which can be time consuming and requires extra effort. Produce does tend to stick while sliding and it takes a little while to master it. Wish it had a better way to store produce holder.

I have another Borner V-slicer Mandoline that doesn't have a storage caddy. When I store it away I have to put a rubber band around it to make sure all the blades don't fall off as I take it out of the cupboard. I bought this one for the convenience of the storage caddy but it is actually very different from my first v-slicer. My first v-slicer has multiple choices for plain slicing from transparent to thick and also for making very thin to very thick julienne slices.This model only offers 2 choices in plain slices and only two choices for thin or thick julienne slices. If I didn't have the first slicer, I would probably be very happy with this one but I like having all those choices that the first model offers. I'll probably return this one and I'll get busy and make a box or a storage bag for my trusty old original v-slicer.

I've had this item for about 8 years (purchased in 2007 according to Amazon) and just recently has the blade started to seem a bit dull. We use this 2-3 times a week to slice veggies for soups, casseroles, etc. I always use this to chop things because I'm lazy and it's faster than using a knife. We're not super picky about the size or shape that comes out of it, I just pick the closest blade for the size I want.YES it is sharp which is why it holds up as long as it does and can handle things like a large potato. YES you have to use the hand guard if you plan to chop down to a tiny nub. I have cut myself occasionally on it, instead of blaming the product I take it as a reminder not to be careless (because it generally happens when I'm being careless). Once you get used to it, you learn how to avoid accidental contact with the blade but I think this is true for any sharp tool.The plastic could be sturdier, but again you can learn how best to work with it. We've had it for 8 years and no part has broken, so it's clearly sturdy enough. I would recommend this to anyone who wants a time saver for chopping in the kitchen and is willing to adapt their cooking style to the device. If you're a professional type and you want veggies "just so" then you probably should look elsewhere. For me, I appreciate that this device doesn't need electricity, doesn't eat up a ton of kitchen space and still saves me time.I downrate this product one star because there is a learning curve to using it.

I've been getting a lot of use out of this slicer since I got it. It's very high quality, the blades are super sharp, it's self contained and pretty easy to clean. If you're looking for something to make veggie noodles with, this is a great choice since it's also multi-functional. I make tons of noodles with this. The only problems I've encountered are 1) The gripper does not work well with going length-wise, as in making long julienne "noodles", especially with harder vegetables, like carrots. It can be done, but it's a bit tricky and tedious. 2) Carrots stained the white plastic. 3) The grippy points on the gripper seem impossible to fully clean.

The only flaw of this machine is that the guides molded into the blade panels often leave lines on my food, which survives not only the cooking process but time in the dehydrator. It makes the food look weird. Other than that it's a perfectly functioning piece of equipment. As with most mandolins you'll always wind up with a heel of food leftover from slicing. I bought cut-resistant gloves with it and just use them to continue slicing these heels that can't be held by the food grip. Carrots will stain the white plastic and after doing just half a bag of carrots I now have a machine with a permanent orange streak down the front. It rinses clean and because of the way the storage holder is designed, you can store the items in it still damp and it'll still dry without rusting.

I did a lot of search on mandolins and settled on this one because it seemed to have a lot of safety features ...and it does! The inserts give you a variety of options....I can get much thinner slices than my more expensive sZyliss "Easy Slice.". It is also more compact and easy to store and wash/It comes with a storage box which catches your veggies after you slice them and stores the inserts when you are done. You put a piece of fruit or veggie in the the little box and go to town. You have to be very careful washing it and it takes a bit of active to figure out the optimal sizes and positioning of different things but it is well worth the time. I have been making such goorgeous salads lately. I shredded a bag of Brussels sprouts in five minutes - and there was no mess.I use it with a cut proof glove to be extra careful. I also like how it sits over its own box so you can use it on the counter and don't have to hold it over a bowl or anything. It is nicely priced on amazon ....not the cheapest but not the most expensive. I am happy with it.

Rather than using the julienne attachments learn to juggle running chain-saws; they're far safer!

The "plain" slicing blades are well designed, very safe and work great. However... the julienne attachments are literally bloody nightmares! First, the attachments are not secured withing the storage case so they slide free and rattle around any sliding drawer they're placed in; very good for cutting oneself while reaching for one gadget or another. Second, the ABS plastic the attachments are made of, while very strong, is also extremely slippery when damp leading to a somewhat humorous "dance of death" when dropped while being taken out of the dishwasher. Third, the blade attachments are FAR longer than the safety grip giving numerous opportunities for injury. I still use this for "plain" slicing and then do the remainder of the work by hand but that kind of defeats the purpose of spending this much money for what turns out to be a mono-task tool.

this thing gets killer reviews on here, but i find it to be pretty cumbersome and annoying to clean. the first concern is that the little nobby thing's metal spikes don't extend further than the base of the plastic, so it's next to impossible for them to grip whatever you're slicing. don't get me wrong, this thing slices well, but man, it's a production. get a zoodler if you are trying to make zoodles. saves you like 10 minutes

Does not slice thin enough for potato chips, & this was my reason for ordering the unit. Am returning for this reason, & will try an adjustable slicer to get thinner slices.Aside from the thickness, I found it interesting that the instruction booklet was in every language imaginable, with English on the very last page. Guess it's because it's a German product. Thought that was funny. Instructions were not very helpful, in my opinion.The box for the product (packed inside another box) was torn & fairly beat up. Wasn't impressed with that, but of course it wouldn't affect how the product worked. It did slice well, at least on the potato I tested...just not thin enough.
Not very good for cabbage

I bought this mainly to shred cabbage for sauerkraut, and I don't think it's a very good tool for that at all. It took me a long time to decide between this mandoline and The Sausage Maker's cabbage shredder. I opted for this because it's smaller and seemed like it would be a better overall kitchen tool, that I could use it on other vegetables, carrots and potatoes and such. And this is German, so I assumed it would be better made than it looks, and I would be pleasantly surprised when I received it.However, I found it very difficult to shred cabbage with this. I had to try to hold the cabbage chunks together as I sliced, and there ended up being fair bit of waste. When I was done shredding, I did not have the 5 pounds of cabbage that I needed for my recipe, so I gathered up scraps and sliced them by hand using a knife. Then I thought maybe I should have just done the whole job with a knife. I have a nice set of Henckel's knives and can't imagine that I'll opt to use this mandoline over my knives very often. On my cabbage I sometimes had to apply a bit more pressure than I was comfortable with; I'd be afraid to use this on hard vegetables like carrots or potatoes. The mandoline feels kind of cheap and flimsy, the safety holder doesn't fit into tracks, so if you were pushing hard and your hand jerked, I think it could be fairly easy to hit those blades.I was worried about this mandoline when I read reviews of people who had been injured, but I figured I'd read the instructions and be careful and would probably be ok. Having used the product just once tho, I'm really not sure that I'll use it again. I wish I had saved my money and just bought the TSM cabbage shredder.

Its a good mandoline, it does the basic job. I still havent been able to figure out how to get the dicing right. Maybe the directions on that arent very clear or may be missing a step, but it doesnt come out right for me. The other negative is that, even with light pressure, I struggle with slicing sweet potatoes. For those reasons, it didnt meet my expectations, but it still does a good job with all other things, and I love the container to hold everything as its being chopped and for storage.
Decent Mandoline For The Price, But Overall Not Great

Don't let the reviews fool you, this isn't a 4.5 star mandoline for a few reasons. The safety holder that holds the food and protects your hand is awkward and painful to touch on the bottom. It has a manual plunger, rather than a spring loaded one like a good Mandoline, and it doesn't have a guide so it's easy to slip off the side. It does stop your fingers from getting lopped off, so it works, but it does so rather awkwardly.There are really only a few inserts, so you have very few options. I think you're pretty much limited to 1/4" (its thick insert) and 1/8" (the thin). Those are probably the two most common sizes you'd want to slice at, so that's good, but they're not the only two. A good mandoline is infinitely adjustable within a range, usually paper thin to about 1/2".It doesn't have extendable feet on the back like a good mandoline, meaning you have to hold it over a bowl or something. You can't just use it on your cutting board, unless you want to constantly be picking it up and clearing the cut stuff from under it.The housing it comes in is sort of a pain too. It's a little bit annoying to remove the unit from the base, or to put inserts in or take them out. On the plus side, it does take up less room than a good mandoline.All that said, this is a value. It's pretty good for the cost. A good dicing mandoline might cost more than 5x as much as this cheap little unit, so you won't be upset about having purchased this little guy. It does seem to stay sharp too, though I wish it had removable blades just in case. It makes a decent first mandoline, or one for someone who won't use it a ton. But if you're a serious home cook, look at the De Buyer units or something that's more adjustable and addresses the other concerns I mentioned.

This thing is definitely good at slicing...fingers. After cutting my fingers a few times (once while moving it from point a to point b), I threw it out. Better safe than sorry. It was cheaply constructed and difficult to take out of its case. When it did work and I wasn't hurting myself, it did make nice slices, but all-in-all I found this to be a very awkward piece of kitchen equipment.

I researched a lot and saw this one had many good reviews and many videos on how to use it. I tried slicing several hard vegetables the day it arrived, but it was just too difficult for me to use. Maybe I am just lacking the strength to use it. I sent it back.
Dont' like it for slicing potatoes -- waaaay too thin. The slices are so thin, nearly see through and they wiggle in the air.

While I like this product (built well, sturdy), I did buy it for slicing. I must say, the slicing was too thin on some items and too thick on others. I can see its value if you really want evenly really thin slices of anything. But when I was using it for potatoes, it was just too thin. Soooo thin you could nearly see through the potato slice and they wiggled in the air. I tried another slice thickness and it was too thick. I ended up using my old slicer and if I am super busy, I just slice by hand.

Frankly I don't understand how this thing gets such positive reviews, especially from Cook's. The "thin slice" is really no slice at all, suitable only for peeling; the julienne blades, bizarrely, cut well before the slicing blade, making it impossible to get a smooth back-and-forth going (you have to lift the work over the julienne blades at every slice); the work-managing cup stands so high above the blade that the thing gives up well before you're done; the approach to the blade is not smooth, but a set of parallel but not-close ridges, making it difficult for soft and/or small work;and overall, it has the feel of cheap plastic.I also own the Oxo mandoline (elsewhere), and boy do I miss it. I'm feeling generous, so I'll give it two stars, but...really, spend the extra $10 for the Oxo.

I wanted to love this. I don't. I thought I was buying a gadget that would earn it's place on my kitchen counter but this one has been banished to the back of the bottom cabinet. It's difficult to get it out of the storage caddy, the blades do not go on or off effortlessly... It feels cheap and not very safe to use. I purchased this because it was recommended by America's Test Kitchen- I'm not sure what they loved about it!

I just used this the other day to julienne some zucchini. The other reviewer was right...That stupid holder is a piece of crap and useless. First of all...it does not hold the food very well and second when I did get it to hold (only by pressure) it did not glide well on the board. Its just slippery all over the place. In the picture it looks like it has tracks of some sort to help it glide but no. I was tempted to just julienne by holding it with my hand but those blades look mighty sharp. After I used it there was so much of the zucchini left over it was a waste and I had to end up using a knife to finish the rest. Whats the point then? I suppose this will be good to use if your using your hands and not the holder but I wouldn't recommend it.

Don't Waste Your Money!

I have opened this up: the instructions are in every language except English. The diagrams are cryptic and refer me to tabs that do not exist on the model I have. Trying to read the German, Dutch, French, and even Hebrew instructions do not help. I even tried using Bing Translator to translate the Russian. The cryptic diagrams do not match the actual devise. I literally cannot use this, because I cannot get the pieces to fit together with the vague and cryptic instructions I cannot use it at all. I cannot do anything with it. A HUGE waste of money!
Product arrived damaged and with missing parts

I purchased this mandolin after researching a lot of different brands and models. I was incredibly disappointed to see that the product arrived dirty (black residue on many parts), with bent julienne blades, and without the rubber feet meant to keep the mandolin from sliding around during use. I'm back to searching for a *high* quality mandolin as this one doesn't appear to fit the bill.
Amazon is great as always but this product was a flop ... Dull

The main blade was literally so dull upon arrival that I could run my fingers up and down with no concern. I think that it left the factory without being sharpened. I will likely order a different brand for this reason.Amazon was amazing with an immediate refund so don't blame Amazon.

VERY disappointed. Maybe I just received a defective item . . . but this cheap plastic gadget with dull blades would not cut onions or tomatoes. The Swissmar Borner V-1001 V-Slicer Plus Mandoline was actually recommended by America's Test Kitchen, but either the quality has gone way down or I received a fake copy. The blades were so dull I could actually but my finger tip on them to test for sharpness with little possibility of injury. The cheap plastic body flexed so much, control was an issue. For almost $30, a must return item.

Poor finish, and a 'safety' handle that's designed to grate plastic into your food. When used correctly, as you push down on smaller pieces of vegetable, the grater scrapes the plastic vegie holder. About 2/3rds of the way through grating an onion, you have to stop and manually chop the remainder, or you end up with plastic in your coleslaw. The cutting blades themselves are sharp and excellent. Just poor design engineering and very average finish in the production stage.
Save your money. Don't buy this.
